The secret to a delicious Chimupotohayi is using more maize meal, sorghum, or rapoko flour than wheat flour. Add enough sugar to taste, then mix all the ingredients into a smooth, thick paste.
Lightly grease an old cast-iron pot with cooking oil and pour in the dough. Place the pot over hot charcoal, then turn the lid upside down and cover it with more hot coals to create even heat from both above and below.
As it bakes, the dough rises above the level of the pot until it touches the lid and turns a beautiful golden brown. This impressive rise is what gives it the name Chimupotohayi.
