This is the ONLY to eat your potatoes Hello Crispy Smashed Potato salad! 🥹 No seven color sunday or even braai is complete without a good potato salad recipe. I have seen so many people make this Viral recipe. This is not a make ahead recipe though. You literally need to make it and serve it immediately so that the potatoes remain crispy. Anywho here is the best potato salad recipe Ingredients 500g baby potatoes, boiled until fork tender 3 Tbsp olive oil 1 tsp italian herbs or mixed herbs 1/2 green pepper, diced 1 shallot, finely diced Salt and freshly ground black pepper Dressing 3 Tbsp Mayonnaise 3 Tbsp Greek Yogurt 2 tsp Dijon Mustard 1 Tbsp Freshly chopped Dill Salt and pepper to taste - Preheat your oven to 200 degrees. Alternatively you can do this in an airfryer. - Gently smoosh your potatoes with the back of a glass. - Drizzle olive oil over the potatoes and season with herbs, salt and black pepper. - Bake until super crispy. You can make this as crispy as you want! I left mine for 30 minutes. - While the spuds are crisping, make the dress by mixing the mayo, yogurt, dijon, dill, green pepper, shallot and seasoning. Once the potatoes are crispy, toss with dressing and serve immediately! I did keep the leftovers in the fridge and the next day they were soft BUT they still had a delicious roasted flavour😍 You can also too these with crispy onions and bacon! #potatosalad #salad #smashedpotatoes #bbqtime #easyrecipe #recipe 04/07/2024
